I made a huge batch of potato salad yesterday afternoon....and now it is already almost gone......Oh how I love summers.......potato salad...bbqing...fruit salad....yummmy....
what other summer favorites do your family have...

Go for a cold pasta...something like Olive and Tomato penne - you can add your own favourite ingredients...if you dont like tomatoes and olives
Penne pasta
olive oil
2 teaspoons of crushed garlic
1/4 cup of olives
2 cups of diced tomatoes
sprinkle of oregano
handful chopped parsley
grated parmasen
Boil off the pasta w/ salted water - get a fry pan, fry off the olivers tomatoes parsley and oregano w/ a little oil. add the cooked pasta to the fry pan mix together sprinkle with parmasen cheese.
You can have it hot or cold , but its a great bbq "salad" ↑ |

As nibbles...get some eggs..boil them cut in half scoop out the egg yolk-
with the yolk mix in some salt peppper and curry powder, mayonasie add that max back into the egg white. Nice little different finger food ↑ |

get your prawns or shrimp - whatever you called them, put them on a scewer bruish with some sweet chilli sauce and lime and put that on the BBQ for aprox a minute each side....YUM!!!
when cooking onions on the BBQ - drizzle beer on top of them ↑ |

2 large chicken breast
2 teaspoons cajun spice
2 corn cobs - dice off cob
2 tomatoes - dice
1 lebanese cucumber - dice
1 tbsp olive oil
sprinkle of corriender
Get the chicken, "flour" it with cajun spices. Set aside. Get the rest of the ingredients fry off in a pan and leave it. Grill the chicken on the BBQ ( for best result ) slice the chicken and add it to the rest of the "salsa" ↑ |

| winn....i love making Greek Salad in the summers, minus the olives....BLAH!!! i hate olives....i usually just cut all the veggies for it in a big massive bowl, and keep it in the fridge....and just make sure i always have feta cheese....and in the summer time, i'm too lazy to make the dressing for it form scratch, so I buy that Kraft Balsamic Vinaigrette to put in it, and it AWESOME!!!! ↑ |

| oh yeah!!! and another summer favorite is making my own fresh salsa.....so simple....finely diced tomato and onion....eye ball it to the ratio you like....add a diced jalepeno pepper, or however hot you like it, and chopped cilantro. salt and pepper, and chill it in the fridge, and it's good to go....very important that it's VERY cold though!!! otherwise it's not the same!! lol...it reminds me of mexico..... ↑ |

| i just cut up the watermelon into cubes and let it soak in vodka!! yum.....bring it to the beach and never get busted for alcohol on the beach....we'd always get our drinks poured out by the cops, so we started bringing watermelon instead in a cooler!! lol ↑ |
