Anyone have a GOOD one? Don't google a reciepe or get it from a book, i would like someones reciepe that they KNOW tastes good.

I made meat loaf i think once before, it tasted like shit :S

2 lbs ground beef
3/4 cup oatmeal (crumble it a bit with your hands)
1 onion, chopped
1/2 ketchup
1/4 cup milk
2 egss
1 tbsp horseradish
1 tsp salt
1/4 tsp pepper

combine all ingredients and make two loaves with it (about 7 1/2" x 4"), and bake about 40 minutes @ 350... *put loaves on a broiler pan, you know the ones that have slots and then a pan underneath to catch the drippings)

then:
1/2 cup ketchup
1 tbsp horseradish
3 tbsp brown sugar
2 tsp mustard

mix those all together and then spoon over meatloaf and bake for about another 5 minutes or so.

this is a recipe i got from my aunt. no book, no internet....i make this recipe all the time and it turns out really good!!

What I do to make it healthier is

1 package (about 1/2-1/3 a pound) ground beef
1 package (about 1/2- 1/3 a pound) ground Turkey
1 Chopped sauteed onion
some ketchup
1 whole sleeve of pounded saltine crackers
Spices, and lots of them as well as fresh garlic and parsley.
a little Worcestershire sauce (sp)
1 Egg
Pepper
then put a layer of ketchup on top, and some times my mom even puts like 4 strips of bacon on top.. sooo good LOL

Put it in a loaf pan and in the oven at like 350 for about 45- 60 min

No book either, just off hand, and some times i switch out the spices to add different tastes and such, and you can even add mushrooms or carrots in it for the kids!

Exactly, some people like oatmeal some like breadcrumbs or crackers, for me use use crackers, I don't like the oatmeal in it, it makes it slimy to me !

lol....yeah i've never found the oatmeal to get slimy. maybe it helps that i crumble it up first.

12 saltine crackers
some salt and pepper (a few shakes each)
some season salt (a few shakes)
1 diced onion
2 eggs
a medium douse of ketchup

mix all,shape,and bake for an hour

Meatloaf shouldn't come from a recipe! It should be slightly different every time. I've never used a recipe, there's just some staples I use each time.
There are no measuring cups or spoons, just an eyeball.

I have never ad a complaint about my meatloaf and there's a couple of ways I make it.

One is pretty basic, take your ground meat (beef or pork or mix them together)
Add an chopped onion, some pepper, Worcestershire sauce, an egg and enough bread crumbs to make it all loafy.
I play around with other spices and herbs too. Garlic, oregano, basil, etc..
Spread some tomato paste on the top and bake it, or use ketchup if you haven't got tomato paste.

The next one(which looks like barf but tastes like heaven) is make the meatloaf the same as always but don't put the tomato paste or ketchup on top. Instead open a can of cream of mushroom soup and dump it on top undiluted.
Cover the pan in tin foil and bake it.
The soup makes it stay extra juicy.
When it's done, take it out of the oven and put kraft singles all over the top and put it back in the oven for a few minutes until the cheese melts.

Like I said, it's sloppy, it looks like puke but it's one of the greatest things I've ever tasted in my life.

I call it "Meatloaf with goop".

The beautiful thing about meatloaf is that it's pretty hard to "F" it up. It's like pasta sauce...you try different seasonings and techniques each time so it's always slightly different but enough of the same to keep everyone happy.
