Peach, I was reading a book on beans - because I was growing them, and needed to know what I could cook with them. Look at all the vitamins and minerals they have, and PROTEIN!!!!!!!

"Cooked beans provide B vitamins: niacin, thiamin, riboflavin, B6, and folic acid; minerals: calcium, phosphorus, magnesium, sulfur and potassium, plus traces of iron, manganese, and copper. Dried beans provide almost as much fiber per serving as bran and as much protein as 2 eggs or 1/8 pound of hamburger. While the protein in dried beans is incomplete, beans IN COMBINATION with grains or diary products provide all the essential amino acids of complete protein.

People were instinctively combining beans and rice in the old days - that combination gives all protein one needs!!!

hi ms peachpit ... i am now 29 yo and me and all my sibblings were all lacto vegetarian babies. we drank soy milk, ate vegetable gerbers, ate tofu ... and then more tofu and other soy products and we are fine. we were always a lot leaner and tinier than all the kids but we were all in all in good health. we never even had any vaccination because it was against my parents belief during that time (since most of them were made of animal products). we're fine and healthy though. i do suggest vaccination if its not out of your religious belief ... but this is your own choice. anyway, we eventually (after being teenagers) started eating meat. i actually went back to being a lacto vegetarian for the last 9 years but my current pregnancy made me crave for buffalo wings ... so im now eating chicken and fish. but no red meat. hope this helps. feel free to ask questions if u want.

Substitutions - Cooking Without Eggs


* If a recipe calls for just one or two eggs, you can often skip them. Add a couple of extra tablespoons of water for each egg eliminated to balance out the moisture content of the product.

* Eggless egg replacers are available in many natural food stores. These are different from reduced-cholesterol egg products which do contain eggs. Egg replacers are egg-free and are usually in a powdered form. Replace eggs in baking with a mixture of the powdered egg replacer and water according to package directions.

* Use 1 heaping tablespoon of soy flour or cornstarch plus 2 tablespoons of water to replace each egg in a baked product.

* Use 1 ounce of mashed tofu in place of an egg.

* In muffins and cookies, 1/2 mashed banana can be used instead of an egg, though it will change the flavor of the recipe somewhat.

* For vegetarian loaves and burgers, use any of the following to bind ingredients together: tomato paste, mashed potato, moistened bread crumbs, or rolled oats.

* For baking: 2 T of flax seed (grinded) soaked in 6T of hot water (for 10 min) replaces two eggs.

theres actually a lot of food she csn try that are vegetarian. i assume she is now eating table food and from our grocery or any health food store, you should be able to buy soy sausages, soy nuggets, and other vegetarian stuff too. She probably doesnt like the taste of meat products. when my son was a baby he only drank 1 brand of formula which was a generic brand from a local super market that was extremely hard to find. everytime i gave him a different formula he would throw up. it was the same with the dish washing detergent that i used to clean his bottles with. i tried to change it one time and he started throwing up too. i asked my doctor about it and he told me that most formulas or detergents are basically the same, my son was just very very sensitive to taste and probably didnt like the taste of the other brands. just keep on trying different foods and see what she will like. also, keep on giving her vitamins or even formula if youre worried about her not getting adequate nutrition.

My son refuses to eat eggs and meat. He has since day one. He'll eat everything else that I make but he refuses to eat the meat. I found that he'll eat soy burgers. I also make sure to cook items that he'll eat and just prepare meat for myself and my husband.

well, hubby made my baby eat one of those stage two jars of baby veggies and turkey last night...and she threw up on our blanket. maybe he'll get the message now to not give her any meat.
